I'm an incoming undergrad at UChicago, majoring in math. It seems to be a pretty good school for quant recruitment, but I was wondering just how easy/difficult it is to land a top quant firm from here. If I join a few trading clubs, try to do well on the Putnam math competition (T200), and nail interview prep, am I pretty much guaranteed? What should I do during college to maximize my odds of landing quant?

Nothing is guaranteed. You need to do all that because it's what everyone else is doing.
To make the most out of your college, find a niche that you are passionate about and learn everything you can about it. The financial market is huge and saying you want a trading job at a top trading firm means nothing at all.
The type of firms in Chicago are different than those in NYC. Find out what they do, where you fit in. Don't forget to go out and network with other people.
Look up MaxDama here. He was just an undergrad kid here many years ago but he was very talented.
He even made a guide to automated trading during his undergrad.

do what you said and then do interview prep. And don’t focus on the top firms until you’re a junior. Try to get a trading internship your sophomore year at a smaller firm. Lastly, try not to burn yourself out. UChicago Undergrad isn’t for the weak.
