Unless they let you take NYU courses, there probably won't be much change for the program for now.
"You will leave this program either nothing or everything."
I see this as the biggest disadvantage of Poly. A good FE program should provide some assurance of capability to potential employer. While you can work hard and be as knowledgable as someone from a top notch program, it will be hard to convince people you are not one of those people who took the easy way out.

How would you guys rate NYU and Poly in terms of brand name?

The short answer is they are the same university now. But I bet people in the know will still recognize NYU math fin > NYU FE.
