GMAT: 740 (49q,42v)
Undergrad: non-target
Math courses: Calc I and II; Stats I; Microecon Theory; Macroecon Theory; Econometrics; Mathematical Econ
Work Experience: non-profit internship
What are my chances for the MIT MFin program?

Why do you target MIT MFin specifically? Do you have any extraordinary story to tell them? Leadership skill?
To get some ballpark idea on where you stand, take a look at the Tracker and filter by MIT MFin fields. You will get a list of members here who applied to MIT. Look at their profile as well.
 
This is a professional, career-oriented degree and I don't think you would even have time to play soccer while an MFin student there. What you propose may work for an undergraduate degree, it would most likely not work for any master degree such as this one.
 
Here is the golden question: What are my chances of acceptance to MIT MFin?
chances... well, if you haven't applied yet, you have zero chances to get in. After you apply, you probably stand 50-50
