What are the universities that I should be considering and where would I be competitive? Do I have chances of getting into MIT MFin or Columbia MFE?

Also, since I have a year before I'm done applying for these programs, is there anything else that I can do to improve my chances at top programs?

Thanks in advance!

Aim for a GM title in chess -- or at least an IM, though it's a bit on the low side. A Fields Medal in math won't hurt your chances. The programming side seems to be a little weak -- add Ruby, Scheme/Lisp, and Fortran. I assume you can write your own compiler from scratch. I note that you don't speak any German or Russian -- that might be a liability. On the plus side it only takes a few weeks to learn these languages. Otherwise your accomplishments and skill set are impressive.
